‘We only bake cakes that we like to eat ourselves.’ Master pastry chef Tomomi Sugimoto, who has worked at the Hotel Bareiss in Baiersbronn among other places, tempts the neighbourhood with German and French delicacies. In the pâtisserie, the Bündner nut tart poses next to the ‘Opéra au caramel’, the Black Forest tart next to the ‘Millefeuille’. Japanese bread and yuzu macarons add an Asian flavour to the spectacle.
